Often referred to as sunchokes, an super easy to grow root vegetable growing 6-10' tall with small yellow sunflower like flowers. Roots have nice nutty like flavour can be eaten raw or cooked like potato. High in inulin and best fermented to avoid its flatulent effects. Harvested for consumption in the fall and winter months. Spreads easily by roots and can grow in just about any soil condition, so make sure to plant in a permanent location.
