Spinach Vine or Caucasian Spinach, is a hardy, perennial climber grown for its tender, succulent, spinach-like leaves. Young spring shoots act like asparagus, while leaves and tender vine tips are versatile substitutes for spinach, tasting mild and juicy, ideal for raw salads, sautés, or cooked dishes. It is deciduous so the plant will die back after frost and re-emerge in spring. Generally pest- and disease-resistant, it benefits from trellising for support. Prefers partial shade.
